Mutton Chuka

Mutton Chuka is one of my very favourite dishes and that too in the sea side shops in Chennai. Very few steps in making this dish and its a great starter.

Ingredients:
(This will serve 4-5 adults)
  1. Mutton (Goat Meat) 3 lbs
  2. Cloves, Cinnamon, Bay Leaves 
  3. Ginger Garlic Paste
Getting Ready:
  1. Slice the mutton into small pieces (smaller the pieces better it tastes)
Step by Step:
  1. Add 2 tspn of oil into the cooker and fry the cloves, cinnamon and bay leaves
  2. Add 1 tspn of ginger garlic paste (if you like the garlic flavour add 1/2 more tspn of the paste)
  3. Add the sliced mutton
  4. Add salt to taste (chuka generally tastes better if it is slightly in the salty side)
  5. Add turmeric powder
  6. Take 1/2 tspn of coriander seeds, 3 red chilly, 1/2 tspn of cummins seeds, 1/2 tspn of fennel seeds, 10-15 whole black pepper and grind it in the mixer (if you do not have the seeds then powders should be fine)
  7. Mix the mutton well and close the lid, allow the pressure cooker till 8 whistles
  8. Let the cooker cool down, then transfer the cooked mutton into a dry pan.
  9. Fry it till all the oil/water is drained (do not remove this oil/water because that liquid is has more taste so allow it to slowly get into the mutton chuka)
  10. Server the mutton chuka with spinkled coriander leaves, slices lemon and slices green chilly

Damn! Do I love this dish or what?!

I make this at home all the time but I add a few tablespoons of onions to give it more kick. I renamed it "Lamb meat balls" so that people would get it. Try adding some bengal gram (the bigger softer chana dal) before grinding. It adds a magic crispy crust to it:)
