Making wine @ home sounds very interesting doesn't it? Yes it's a lot of fun to make your own drink and pair it with your delicious food.
Here are few fundamentals of making wine:
1. Wine can be made with most of the fruits, sometimes even rice can be used to make your wine
2. Approx. in 21 days of fermentation you should be able to bottle your home made wine
Wine Making -Basic
Ingredients: The rule is simple 1 2 3
1. Black grapes (well rippened) - 1 Kgs or 2.2 Lbs
2. Sugar - 2 Kgs or 4.4 Lbs
3. Water - 3 L or 0.8 G
4. Whole Wheat - Hand full
5. Dates - Hand full
6. Dry Yeast - 75 gms
Step by Step:
- Ideally we need a fermenter to hold the wine mixture but as a beginner we will just use a fresh plastic bucket
- Mash the grapes with your hand or wooden spoon. Make sure all the grapes are atleast squeezed a little bit (do not use blender to do this as it will give more bitterness from the skin)
- Dissolve the sugar in the water (luke warm water helps in faster dissolving)
- Sprinkle the yeast into the mixture
- Add the dates (try an mash the dates a little bit)
- Add whole wheat
- Stir the mixture well and cover it with a dry clean cloth and preserve it is room temperature (do not expose it to sunlight)
After that you leave the mixture as it is for the next 6 days
Extract The Wine:
- Carefully syphon the wine out of the primary container using a traditional thin tube
- Make sure the grape particles are not syphoned (use a cloth filter or a normal tea filter to avoid the grapes and other particles from being syphoned)
- Syphon the whole wine into another large container (secondary container)
- There will be a thick sedimentation at the bottom of the primary container, stop syphoning when you reach that point and when you feel that the sediment is getting dissolved with your wine
- Now the wine is ready for secondary fermentation. Leave the wine in the secondary container undisturbed the remaining 5 days
- Now the wine is ready for bottling, carefully syphon the wine into bottles without disturbing the sediment
- Approx you should get 8 bottles of wine. Each bottle is 750 ml
Tips:
- You can use a fruit of your choice to get different flavours of wine
- You can change the sugar quantity to increase/decrease sweetness
- You can change the yeast quantity to increase/decrease bitterness
