Mutton Chuka

Mutton Chuka is one of my very favourite dishes and that too in the sea side shops in Chennai. Very few steps in making this dish and its a great starter.

Ingredients:
(This will serve 4-5 adults)
  1. Mutton (Goat Meat) 3 lbs
  2. Cloves, Cinnamon, Bay Leaves 
  3. Ginger Garlic Paste
Getting Ready:
  1. Slice the mutton into small pieces (smaller the pieces better it tastes)
Step by Step:
  1. Add 2 tspn of oil into the cooker and fry the cloves, cinnamon and bay leaves
  2. Add 1 tspn of ginger garlic paste (if you like the garlic flavour add 1/2 more tspn of the paste)
  3. Add the sliced mutton
  4. Add salt to taste (chuka generally tastes better if it is slightly in the salty side)
  5. Add turmeric powder
  6. Take 1/2 tspn of coriander seeds, 3 red chilly, 1/2 tspn of cummins seeds, 1/2 tspn of fennel seeds, 10-15 whole black pepper and grind it in the mixer (if you do not have the seeds then powders should be fine)
  7. Mix the mutton well and close the lid, allow the pressure cooker till 8 whistles
  8. Let the cooker cool down, then transfer the cooked mutton into a dry pan.
  9. Fry it till all the oil/water is drained (do not remove this oil/water because that liquid is has more taste so allow it to slowly get into the mutton chuka)
  10. Server the mutton chuka with spinkled coriander leaves, slices lemon and slices green chilly

Brain Pepper Fry

Brain Pepper Fry is a delicacy in South India, its the most simplest dish to make yet so very tasty.

Ingredients:
(This will serve 4 adults)
Goat Brain - 5 nos (for people in US, most of the Halal food store should be selling goat brain)
Black Pepper (coarsely ground) - 4 tspn

Getting Ready:
(If the goat brain is frozen then place the brains in warm water to defreeze it. Do not microwave)
Goat Brain - Slice the goat brain in small size pieces (usually an average sized goat brain can be sliced into 10 pieces)
Black Pepper - Take whote black pepper and grind it in the mixer for few mins till its coarse.
(do not grind the pepper finely)
Step by Step:
1. Take a non stick pan and add 5 tspn of oil
2. Wait for 2 mins till the oil heats up, then add the sliced brain (cook the brain in medium flames)
3. Add 3-4 tspn of coarsely ground black pepper (you are the chef for your dish so decide on how much spicy you want the brain to be)
4. Add salt and turmeric powder as required

Cookmonk suggestion: This dish should be little bit on the spicy/salty side

5. Constantly stir at medium flames
6. Smaller pieces of brain makes the dish more tasty so use your stirrer to split larger pieces
7. If required add a spoon of oil (optional)
8. Fry the brain for 10 to 15 mins, but still you take a call (brain should be fried and not burnt)
9. Transfer the brain pepper fry into a bowl and decorate it with corriander leaves and ginger (cover the bowl for few mins for the essense of ginger and corriander to get along)

And that's it your delicious Brain Pepper Fry is ready!

Bell Pepper Chicken Gravy

Bell pepper chicken gravy is a nice blend of greens and chicken, mostly semi spicy and great for naan or chapathi.

Of course its very simple!

Ingredients:
(This will serve 4-5 adults)
Onion - 1 big
Tomato - 2 medium sized
Chicken (chicken thigh is preferred) - 3 lbs
Bell Pepper (green) - 1 big
Green Chilly - 4 Indian small Chillies
Coriander Leaves - 1/2 bunch



Getting Ready:
Onion - Chop the onion is medium/small pieces
Tomato - Chop the tomato in medium pieces
Chicken - Cut the chicken in small pieces
Bell Pepper - Chop the pepper in medium pieces
Green Chilly - Finely chop the chilly
Coriander Leaves - Finely chop the leaves

Step by Step:
  1. Take a nice big pan, add 5 tspn of oil (more is better, less should be fine)
  2. Throw in the chopped onions and green chilly, wait until its golden brown
  3. Add 1/2 tspn of salt and 1/2 tspn of turmeric powder
  4. Stir the onions for a min
  5. Now its time for the chicken, add the chicken
  6. Add 1/2 tspn of turmeric powder again
  7. Add Salt as necessary, for me another 3/4 spoon would be good enough
  8. Add 1/2 tspn of cummins powder, 1/2 tspn of fennel powder, 1/2 tspn of corriander powder and 1/2 tspn of red chilly powder
Stir the chicken for few mins in medium flames. (Usually the chicken should start leaving out the water content in it but if not then add 1/2 cup of water to it)

Approx 10 mins the chicken should be almost cooked and your semi gravy chicken should be smelling good, at this time add the chopped bell pepper

Stir the mixture for few mins then add the corriander leaves and stir the mixture for few mins.
Reduce the flame to low and leave it for 10 mins. And that's it before transferring it to the serving bowl sprinkle 1 tspn of black pepper powder and mix it well.

Your delicous Bell Pepper Chicken Gravy is ready!
